Instructions
- Drain and rinse chickpeas well, then pat dry.
- Dice cucumber, halve tomatoes, dice red onion, and chop herbs.
- Whisk olive oil, lemon juice, lemon zest if using, Dijon mustard, garlic, oregano, salt, and pepper in a small bowl.
- Add chickpeas, cucumber, tomatoes, red onion, and herbs to a large bowl.
