  • Peanut oil, canola oil, vegetable oil, or avocado oil, for frying
  • 4 hamburger buns or brioche buns
  • 2 tablespoons butter, softened
  • Dill pickle chips
  • Mayo, honey mustard, ranch, or copycat-style sauce, optional

Instructions

  1. Slice chicken breasts into 4 sandwich-size cutlets.
  2. Pound chicken evenly.
  3. Mix pickle juice, buttermilk, egg, and optional hot sauce.
  4. Add chicken and marinate for at least 30 minutes.
  5. Whisk flour, powdered sugar, paprika, garlic powder, onion powder, salt, pepper, cayenne, and baking powder.
  6. Heat oil to 350°F.
  7. Remove chicken from marinade and coat firmly in seasoned flour.
  8. Let coated chicken rest for 5 to 10 minutes.
  9. Fry chicken for 3 to 5 minutes per side until golden and cooked to 165°F.
  10. Drain on a wire rack.
  11. Butter and toast the buns.
  12. Assemble sandwiches with crispy chicken, dill pickles, and optional sauce.
  13. Serve hot.

Notes

For a spicy version, add cayenne to the flour and hot sauce to the marinade. For an air fryer version, spray coated chicken well with oil and air fry at 380°F until crispy and cooked to 165°F.
