Instructions

  1. Pound chicken cutlets to an even thickness.
  2. Mix pickle juice, buttermilk, egg, and optional hot sauce.
  3. Add chicken and marinate for at least 30 minutes.
  4. Whisk flour, powdered sugar, paprika, garlic powder, onion powder, salt, pepper, cayenne, and baking powder.
  5. Heat oil to 350°F in a heavy skillet or Dutch oven.
  6. Remove chicken from marinade and coat firmly in seasoned flour.
  7. Let coated chicken rest for 5 to 10 minutes.
  8. Fry chicken for 3 to 5 minutes per side, until golden and cooked through to 165°F.
  9. Drain on a wire rack.
  10. Butter and toast the buns.

Notes

For a spicy version, add cayenne to the flour and hot sauce to the marinade. For an air fryer version, spray coated chicken very well with oil and air fry at 380°F until crisp and cooked to 165°F.
