Chicken Marinade
- 2 large boneless skinless chicken breasts, sliced into 4 cutlets
- 1 cup dill pickle juice
- 1/2 cup buttermilk
- 1 large egg
- 1 tablespoon hot sauce, optional
Crispy Coating
- 1 1/2 cups all-purpose flour
- 2 tablespoons powdered sugar
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon cayenne pepper, optional
- 1/2 teaspoon baking powder
For Frying and Assembly
- Peanut oil, canola oil, or vegetable oil, for frying
- 4 hamburger buns or brioche buns
- 2 tablespoons butter, softened
- Dill pickle chips
- Mayo, honey mustard, ranch, or copycat-style sauce, optional
Instructions
- Pound chicken cutlets to an even thickness.
- Mix pickle juice, buttermilk, egg, and optional hot sauce.
- Add chicken and marinate for at least 30 minutes.
- Whisk flour, powdered sugar, paprika, garlic powder, onion powder, salt, pepper, cayenne, and baking powder.
- Heat oil to 350°F in a heavy skillet or Dutch oven.
- Remove chicken from marinade and coat firmly in seasoned flour.
- Let coated chicken rest for 5 to 10 minutes.
- Fry chicken for 3 to 5 minutes per side, until golden and cooked through to 165°F.
- Drain on a wire rack.
- Butter and toast the buns.
- Assemble sandwiches with crispy chicken, pickles, and optional sauce.
- Serve hot.
Notes
For a spicy version, add cayenne to the flour and hot sauce to the marinade. For an air fryer version, spray coated chicken very well with oil and air fry at 380°F until crisp and cooked to 165°F.
