Ingredients:
For the salad:
1 small head green cabbage, finely chopped
1 large English cucumber, finely diced
1 bunch green onions, thinly sliced
2 cups fresh spinach, finely chopped

For the green goddess dressing:
1 cup fresh basil leaves
1 cup fresh parsley or cilantro
2 cloves garlic
1/4 cup lemon juice
1/4 cup olive oil
1/3 cup raw cashews, soaked if needed, or 1/2 cup Greek yogurt
2 tablespoons nutritional yeast or grated parmesan
1 teaspoon salt, or to taste
1/2 teaspoon black pepper
2–4 tablespoons water, as needed to blend

For serving:
Tortilla chips, pita chips, crackers, or toasted bread

Instructions:
1. Finely chop the cabbage and add it to a large mixing bowl.
2. Dice the cucumber, slice the green onions, and chop the spinach. Add everything to the bowl.
3. In a blender, combine basil, parsley or cilantro, garlic, lemon juice, olive oil, cashews or Greek yogurt, nutritional yeast or parmesan, salt, pepper, and 2 tablespoons water.
4. Blend until creamy and bright green, adding more water as needed.
5. Taste the dressing and adjust with more lemon, salt, or herbs.
6. Pour the dressing over the chopped vegetables.
7. Toss for 2 minutes until everything is evenly coated.
8. Serve chilled with tortilla chips or as a side salad.

Notes:
For the best texture, chop the vegetables very finely so the salad is scoopable.
Store dressing and vegetables separately if meal prepping for more than 1 day.
