- 3 cups cold cooked rice
- 2 eggs, beaten
- 1 1/2 cups frozen peas and carrots

- 2 tablespoons soy sauce, or low-sodium soy sauce
- 1 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 teaspoon grated ginger, optional
- 2 green onions, sliced
- Black pepper, to taste
- Sriracha, red pepper flakes, or lime juice, optional
Instructions
- Pat shrimp dry and season lightly with black pepper.
- Mix soy sauce, sesame oil, garlic, and optional ginger in a small bowl.
- Heat 1 tablespoon oil in a large skillet or wok over medium-high heat.
- Cook shrimp for 1 to 2 minutes per side until pink and opaque, then remove from the pan.
- Add remaining oil and scramble the eggs.
- Add frozen peas and carrots and cook until hot.
- Add cold rice and break up clumps with a spatula.
- Pour in the sauce and stir-fry until the rice is hot and lightly toasted.
- Return shrimp to the pan and toss everything together.
- Finish with green onions and optional sriracha, red pepper flakes, or lime juice.
Notes
Cold leftover rice works best for fried rice. If using frozen shrimp, thaw completely and pat dry before cooking. Cook shrimp just until pink and opaque so it stays tender.
