Ingredients
- 4 cups chopped Swiss chard
- 1 can chickpeas, drained and rinsed
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup feta cheese
- 1/3 cup Kalamata olives
- 1/4 cup red onion, diced
- 1/4 cup parsley, chopped
Lemon Dressing
- 1/4 cup olive oil
- 3 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 garlic clove, minced
- 1 teaspoon dried oregano
- Salt and black pepper, to taste
Instructions
- Wash and chop Swiss chard into bite-size pieces.
- Add chard, chickpeas, cucumber, tomatoes, feta, olives, onion, and parsley to a bowl.
- Whisk olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper.
- Pour dressing over the salad.
- Toss well until everything is coated.
- Let rest for 10 minutes before serving.
